How to prepare pasta dough by hand and by machine.
How to roll out sheets of dough with a rolling machine or with a pasta machine.
How to prepare basic types of fresh pasta: tagliatelle, tagliolini, pappardelle, and quadretti.
The basics of preparing lasagne, cannelloni, and rosette di pasta (pasta roses)
Three traditional Italian meals based on pasta fresca
